Make Your Own Kombucha

Our more focused health journey started with healthy cooking and the importance of quality fruits and vegetables and convenient, inexpensive ways to get and grow them. This had great health benefits, but some continuing digestive issues opened our eyes to the world of fermenting, which has been tremendously helpful. It is amazing how much power God put into the things we eat and drink and the world around us… much of which has been lost to the modern mind. 

As we pursue the path to healthy living, may we grow in our awe of the God of creation! As the song goes, “All things bright and beautiful, All creatures great and small, All things wise and wonderful, The Lord God made them all.”

MATERIALS:

  • SCOBY
    • This is the key ingredient of kombucha. Making Kombucha creates more SCOBYs, so you only need one to get started.
    • If you live near us, let us know and we may have a SCOBY for you. :o)
  • Black Tea (bags or loose leaf – I use loose leaf and have a filter to get it out later)
    • Not flavored tea, which has other flavors, oils, etc. which could damage the SCOBY
    • Preferably organic
  • Green Tea (Gunshot – to have caffeine)
    • This is optional to mix 50/50 with the black tea
  • Organic Pure Cane Sugar
    • Costco has this
  • one gallon glass jar
    • I recommend having two (or more) to help with the process and to alternate start weeks.
    • This could be any large glass jar with a wide mouth.
  • Smaller bottles for 2nd fermentation
    • Need to have:
      • airtight seal
      • strong enough for some pressure build up if you plan to allow for carbonation
    • Old Kombucha bottles should work
  • Optional Items
    • Heating Mat – If you will be making Kombucha in cool weather (lower than around 80F)
      • I like the mats that wrap around the jar more than those that are underneath.
      • Some heating mats have adjustable temperature.
      • The temperature can also be adjusted by putting chopsticks/pencils between the mat and the jar. (Add more chopsticks as needed.)
      • You can also store the Kombucha in a warmer cabinet, etc. as long as the temp is between 76-85 (warmer is better).
    • Thermometer (There are choices for this)
      • Temperature Strips – These are nice to check the temperature at a glance
        • Note: A heating pad should come with a temperature strip
      • Temperature Gun – This is nice if you want to be able to check many things, not just a Kombucha jar.
        • Hint: Put some masking tape on the jar to shoot with the temperature gun.
  • Materials that you may already have
    • Purified Water
    • A pan for heating 1 gallon of water
    • a strainer for catching tea leaves, etc.

DIRECTIONS: 

Notes before starting:

  • Making kombucha is really quite simple.
    • I highly recommend the video “How To Make Kombucha – First & Second Fermentation” from DaddyKirbs Farm to see the whole process.
    • My directions below have a lot of details and comments (to answer questions that may come up from the video), but it’s really quite simple.
    • Basically: Make sweet black tea > Let it cool > Add the starter tea & SCOBY > Cover and put in a dark spot > Wait 7-21 days > Bottle and drink!  (It’s also fun to watch the SCOBY grow. :o)
    • The first two times, I was figuring out what to do so it took more thought and time, but since then it is quick.
  • Let me know of any questions and comments and I can then use those to clarify these directions.

Directions:

  • First Ferment
    • Prepare 1 gallon of tea
      • Boil 1 gallon of water (remove from heat)
        • Let it boil for a few minutes to off gas chlorine (if you have chlorine in your water).
        • If you have purified water, you can boil 3+ cups of water to make tea, and then mix with cool water later to quickly cool the tea.
      • Add 2 Tbsp (6 tsp) loose leaf tea (black and/or green) (or equivalent tea bags)
        • Steep for 10-15 minutes
        • Note: The SCOBY eats the caffeine from the tea. The tea needs to be black tea, Gunshot Green tea, or a mix of the two.
      • Remove tea (run through a sterilized filter if using loose leaf)
      • Stir in 1 cup Organic Pure Cane Sugar
    • Cool the sweet tea to 75-85 F
      • If you boiled 1 gallon of water, let it sit for a few hours.
      • If you boiled 3+ cups of water to make the tea,
        • Fill glass jar ⅓ full of cool filtered or boiled/cooled water
        • Add tea
        • Top off with cool water, leaving room for the starter tea and SCOBY (apx 3-4 in)
    • Add starter tea and SCOBY
      • Note: pH should be below 4.5, BUT I don’t check our pH. I simply use more than the minimum amount of starter tea as mentioned below. The pH will drop as it ferments.
        • If the pH is too high, some people add distilled white vinegar (some say to never add white vinegar)
          • I have never added white vinegar.
          • You could also add more of your recently finished batch of kombucha.
        • Most commercial SCOBYs come with ~2 cups of starter tea and most directions recommend setting 2 cups aside from the previous ferment. I prefer to set 3-4 cups aside to make sure that the acidity is low enough.
          • The benefit is that the pH is low enough and I don’t need to think about it.
          • The negative is that we have less of each batch to drink (but still have plenty).
    • Set aside for fermentation
      • Secure cloth over jar
        • I like a coffee filter or solid knit, non-shedding cloth.
          • Personally, I just use a coffee filter.
      • Place in warm area (75-85F)
        • Notes:
          • Cold = mold
          • Try not to shake the jar, etc. while fermenting
          • Dark locations are best
          • If the SCOBY floats, it will get larger. If it sinks, it will form a new SCOBY on the surface. (It’s fun to watch form and is not mold.)
      • Ferment to taste
        • usually around 7-21 days
          • shorter = sweeter, longer = more vinegary
        • Taste by inserting a clean straw under the SCOBY. Plug the end of the straw and pull it out.
          • Can also push the SCOBY down with a clear punch spoon and scoop some out to taste.

  • Second Fermentation
    • Optional, to add flavor and/or carbonation
      • To only add flavor (not carbonation), do the second ferment in an open top bottle with a cloth on top (like the first ferment)
      • To only add carbonation (not flavor), follow the steps of the second ferment, but don’t add flavor.
    • First, prepare to start a new batch for first ferment
      • With clean hands or tongs, take out the SCOBY and put it in a bowl
        • You may want to wipe or rinse the yeast off to reduce alcohol production.
      • Put some of the finished kombucha that just finished fermenting in the bowl.
        • Many recommend 2+ cups of starter tea. I prefer to use 3+ cups to make sure the acidity is low enough in the new batch.
        • Scoop from the top to avoid the yeast to reduce alcohol production.
      • If you won’t be starting a new batch in the next few minutes, put a cloth over the SCOBY bowl.
    • Pour the Kombucha into smaller bottles for 2nd ferment and serving.
      • The bottles need to be strong enough to stand the pressure of carbonizing.
      • Optional: Add flavoring to smaller bottles
        • Flavoring can be: Pure juice, fruit pieces, ginger pieces, etc.
      • Pour the rest of the finished Kombucha (that wasn’t set aside as starter tea) through a filter into the smaller bottles.
        • Leave space at the top for expansion.
        • Use a funnel.
        • The filter removes any big pieces of SCOBY and yeast
    • Optional: Prepare to carbonate
      • If you want to add carbonation, seal the bottle.
      • If you don’t want to carbonate, leave the bottle open with a cloth on top (as with the first fermentation)
    • Store in a warm, dark place (as with the 1st fermentation) for 1-3 days.

  • Start a new first fermentation
    • Rinse the now empty fermentation jar
      • water only, no soap
      • I rinse with tap water, then put in boiled water to sanitize.
    • With the SCOBY and needed starter tea aside
    • Follow the directions for the 1st fermentation.

As you make kombucha, you will start to have extra SCOBYs. These can be used for many things, including sharing with a friend to spread the joy!

September & October Yearly Free Family Events (Cleveland, OH)

It has been a year since we began our look at the Free Family Events in the Cleveland area.

We are now going to begin writing about new areas of God’s creation and provision, while continuing to post events that repeat yearly. We will also fill in some details about specific featured events.

Featured Event

  • The Cleveland Air Show
    • The Cleveland Air Show is on Labor Day weekend. We have been going for a few years and this year we found the perfect locations to park and watch the show.
      • We parked across from the “Cuyahoga County Board of Developmental Disabilities” and “WKYC-TV” ($3)
      • We then walked directly across the street to a little gate between these two buildings. This location is directly behind the airport and you can easily see the show in a nice, shaded, area. If you desire you can go behind the WKYC building for a better view. (We didn’t do this since we have young children and didn’t want them to roll down the hill. :o)
      • Before the military formation fliers come (This year it was the Air Force Thunderbirds), you can walk down to Voinovich Bicentennial Park, where the planes will fly right over your head (loud!) and you can even see the pilots as they whip by.

New Discoveries of the month

  • Rockefeller Park & Greenhouse
    • For a warm forest walk in the winter (in Cleveland), to see how banana’s grow, to enjoy a garden for the blind and much more, the Rockefeller Park & Greenhouse is a wonderful free destination.
    • It is also on the path of the Cleveland Cultural Gardens near University Circle.
  • Baldwin Wallace University Cafeteria
    • The Cafeteria is located in the Student Union.
    • For non-students paying to eat, it is $6 for breakfast, $8 for lunch and $10 for dinner (no tip or tax). It is all buffet style and the food choices change daily. There are a variety of areas featuring different types of food. (For dinner, you can also fill a good size box for $8 instead of the buffet. I’m not sure about the other meals.)
    • The hours are:
      • Breakfast: Monday-Friday 7-10:30 a.m.; Saturday and Sunday 8-10:30 a.m.
      • Lunch: Monday-Sunday 11 a.m. -3:30 p.m.
        • For lunch some things may close down at around 2pm, but there is still lots to choose from.
      • Dinner: Monday-Sunday 4-8 p.m.
    • For a fun, college atmosphere, good food made fresh, decent prices, this is a nice place to visit.
    • For those with children: We had a hard time being there with our 17 month old as he wanted to get into everything and there are no high chairs. Until he is older, we will use this more as a place for date times and perhaps individual times with our older boys.

August Free Family Events (Cleveland, OH)

Tomorrow is the last day of the summer session at Tri-C. It has been a wonderful group of students, and while I am excited for the break, I will miss seeing them. They invested their summer and worked hard with a positive attitude. This is a reminder to me and to all of us. Don’t take a break from learning and growing.

This learning and growing can take the form of learning something new, developing a new habit, taking a class, etc. Or it can look more like taking a step out of the busyness of life to reflect, to see where life is heading and what needs to change, to seek God, his face and his ways. What is important and being missed in the speed of life?

For active learning, one resource we recently discovered is through the Cuyahoga library. They offer free resources, classes and online classes. One that we have been using is Creativebug. (Click here for resources that are free with your library card.)

Other hobbies and skills that have been brewing in our family recently are balloon twisting and playing the recorder.

July Free Family Events (Cleveland, OH)

Freedom!

William Wallace made this final cry as he was killed in the movie Braveheart. Closer to home, countless soldiers have cried this same cry as they charged into battle and nearly certain death. The signers of our Declaration of Independence were crying out “Freedom!” as they boldly signed an act of high treason against the British crown. Many unknown and unsung men, women and children paid a high price to secure and defend that freedom.

This July 4, we celebrate our Independence Day. Let us take just a moment to reflect on some of the freedoms which God has blessed us with in this great nation (from the Bill of Rights)

  • right of the people peaceably to assemble, and to petition the Government for a redress of grievances
  • the right of the people to keep and bear Arms
  • The right of the people to be secure in their persons, houses, papers, and effects, against unreasonable searches and seizures
  • the right to a speedy and public trial, by an impartial jury

As a result of these, and other stated rights, we also enjoy the freedom to:

  • birth and raise our children as God directs to the glory of God
  • educate our children as God directs to the glory of God
  • gather to worship as God directs to the glory of God
  • travel and see God’s creation of nature and culture
  • and many, many more.

With all the freedoms with which we have been blessed, we need to meditate on the warning and command given in 1 Peter 2:16, “Live as free people, but do not use your freedom as a cover-up for evil.”

We may fall into mistaking our freedom as a right to do whatever we please. We are to be free from sin to live for God.

May we remember our source and purpose of freedom as we celebrate this Independence day.

June Free Family Events (Cleveland, OH)

The spring rains have brought the green of life to northeast Ohio. The birds are chirping, squirrels are scampering and I saw my first Monarch butterfly a few days ago (and the mosquitoes seem to still be sleeping!). What a wonderful time to just get out for a walk, a run, a ride, or a sit and soak up the beauty and freshness of God’s creation!

The biggest event for this month… just grab your family and go outside, you can hardly go wrong. From a path or a nature center in the Metroparks, to a (now empty) school playground, to just playing catch in the yard, this is a great season to just get outside and enjoy life together.

For many it also means a summer vacation, or at least an extended weekend, which allows some time out of the day to day routine to think about purpose and direction. Are things heading in a meaningful direction? Are we seeking and walking with God? What are some changes to make, or some victories to celebrate? Life, like the spring, passes so fast. Let’s make the most of it!

Faith comes by HEARING

“So faith comes from hearing, and hearing through the word of Christ.” Romans 10:17

This past year our BSF study was going through the People of the Promised Land 1 (Joshua-Solomon). As part of that study, I was blessed with the opportunity to give the lecture on the book of Psalms.

Before preparing the lecture, I wanted to get the full picture of the Psalms by reading through them at least once and hopefully several times. It was at this time that I learned from my wife the wonderful blessing of LISTENING to God’s Word. Yes, I enjoy reading it, but LISTENING added a whole new element. Interestingly, this is the only way that many people through the years have learned God’s Word as books were not always as available as today. This became my go-to to listen to while driving, and helped to seize every moment for Christ.

When looking to listen I tried out a few audio Bibles. They were OK, but didn’t really draw me into the Word.

Then I found one that did! I felt like God’s Word came alive.

And as an added bonus the best one I found was free!!! That means that not only can I enjoy it, but I can easily point others to it as well.

These particular recordings are dramatized with music and different voices reading the ESV translation. It is also available in a non-dramatized version, as well as just about every language in the world.

I pray that this may help your enjoyment of God’s Word come alive as much as it has for me.


As an added note, for the study of the Psalms, I had certain Psalms that I listened to (and continue to listen to fairly often) for each day of the month. This is in addition to listening to other areas in God’s Word that I am currently studying.

I consider a month to have 30 days, so listen to every 30th Psalm starting with that day’s date.

For example on the first of the month, I listen to Psalm 1, Psalm 31, Psalm 61, Psalm 91, Psalm 121 and Proverbs 1.

For the second of the month I listen to Psalm 2, Psalm 32, Psalm 62, Psalm 92, Psalm 122 and Proverbs 2.

Notice, just take the day of the month and keep adding 30 until you run out of Psalms.

For Psalm 119 (the longest chapter in the Bible), I sometimes listen to it as scheduled above, or I put it by itself on the 31st day of months with 31 days.

The way that I made this more convenient is that I made playlists on my phone. Everyday has a playlist with just the right Psalms & Proverb. Then, when it is that day, I can just play that playlist. It is ready to go every day, every month.

I download the playlists to the phone so that I can listen on the go without using my phone data.


This gift has been an amazing blessing to me, which is now enjoyed by our whole family as we play it at home. I pray that soaking in God’s Word will be a blessing to you as well, as the Holy Spirit makes the Word alive to you.

Life!!!

Just get outside or look out the window and you will see the yearly celebration of life. Today we planted a new apple tree. All winter we saw the one we plated last year. It looked small and dead, yet we knew it was alive. It was just doing what God made it to do, and now it is alive with green… though flowers and apples require another few years of waiting.

We can enjoy the beauty of a sunny, snowy day because we know, it’s all still alive, it just is taking a break to allow the artistry of winter.

The animals are tucked away… yet there is life.

The birds eggs (and the bugs) have not yet hatched… yet there is life.

Take this month to just celebrate LIFE!

We aren’t listing as many events… they aren’t needed!

The parks are alive, inviting us to come and explore.

The stars are sparkling, inviting us to stay up just a bit later.

Slow down a bit, get your family together, and just enjoy LIFE!

For you created my inmost being; you knit me together in my mother’s womb. I praise you because I am fearfully and wonderfully made; your works are wonderful, I know that full well. My frame was not hidden from you when I was made in the secret place, when I was woven together in the depths of the earth. April Free Family Events (Cleveland, OH)

Christ Jesus, Who, being in very nature God, did not consider equality with God something to be used to his own advantage; rather, he made himself nothing by taking the very nature of a servant, being made in human likeness. And being found in appearance as a man, he humbled himself by becoming obedient to death— even death on a cross!

Therefore God exalted him to the highest place and gave him the name that is above every name, that at the name of Jesus every knee should bow, in heaven and on earth and under the earth, and every tongue acknowledge that Jesus Christ is Lord, to the glory of God the Father.” (Philippians 2:5-11, NIV)

Christmas is a wonderful and amazing holiday. The Creator, God of the Universe willingly taking on flesh and living as a man (including the suffering)… Astonishing. But the culmination of that event is found in Good Friday and Resurrection Sunday (Easter).

God the Son, Jesus, taking the sin of his people onto himself and dying for our sin. God the Father, for the first (and last) time in all of eternity turns his face away. Jesus has taken the filth of his people… onto himself!…. (my mouth hangs open… no words).

Death! He is dead. He is pierced. His is lifeless on the cross. He is buried….

ALIVE! He is alive. He had beaten death, paid the price for sin, and is alive!

To read this in the biographies of Jesus is one thing, but to read it written of apx. 500 years before… Hmmmm…. Take some time to read Isaiah 52:13 – 53:12. Read and reflect on the love and mercy and grace of the risen LORD!

That is THEE event this month, this year and since the creation of the world. Don’t miss it. Don’t dilute it. This is THEE event… let it echo in our hearts and in our lives.

We feel it has been a very mild winter (you may disagree :o). A few days of very cold, a few days of snow, but overall not bad (unless you were looking forward to more snow activities). Well March is here, so we may get a few more big snows yet, but any snow now is just swinging through to say “Good-bye” as winter turns into spring. God has created such beautiful seasons, and we are grateful for the opportunity to experience each of them.

So if it does snow, perhaps you can head out for a family time of sledding (best sled riding hills) or stay in for a family game night. Either way, we can be grateful for the changing beauty that God has created.

Happy Chinese New Year!!!

Chinese New Year is on the lunar calendar so moves around a bit on the western calendar (similar to Easter).

Thousands of years of celebrating a holiday can develop quite a few traditions, and the traditions do make the holiday something to look forward to and help with remembering the holiday and creating a feeling around the holiday. However, these same traditions can just become things to do.

This is true not only of the Chinese New Year, but of all areas of our life.

This month is also the month of love and Valentines day. If you celebrate this holiday, is it with excitement to express your appreciation for one you love, or is it to meet the social expectation of the holiday?

Do the traditions of Christmas & Resurrection Sunday (Easter) point you more firmly to Christ… or are they meaningless (though possibly fun) activities that take your time and focus away from Christ?

Traditions can be great reminders, but our family is constantly reminded that we need to remember what is important and why and use the traditions to keep us focused.

Whether you recognize Chinese New Year, or Valentines Day, or Groundhog Day or the Super Bowl…we need to remember that everything, every blessing, all love, the seasons, and our abilities all come from Christ and are for him alone.

With that said, here are some events that can just be events… or they can be meaningful times to focus on God and His creation. Enjoy!
